I forgot to tell you, I am canning my elderberry syrup.  Here is the recipe.

If you have a gallon of berries, which is not hard even from one plant, then you place them in a stainless steel pot and add enough water just to cover.  Bring to a boil and then reduce to a simmer for about 25 to 30 minutes.  Strain juice through a sieve or jelly cloth.  Add 3.5 cups of lemon juice, 2 cinnamon sticks and about 2 pounds of honey.  Bring back to a boil in the same pot for about 2 minutes stirring to dissolve honey.  Then you are ready to can it.  Use pint jars and make sure they are super clean and hot and the lids are hot also.  Water bath can for about 25 minutes and you should be all set for the winter.

This is good for colds, flu, and even constipation.  You can also make tea or jelly or even wine out of them.
